5 Minute Chocolate Mug Cake

5 MINUTE CHOCOLATE MUG CAKE
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A small splash of vanilla extract
1 large coffee mug (MicroSafe)

Add dry ingredients to mug and mix well.  Add the egg and mix thoroughly.
Add in the milk and oil and mix well…
Add the chocolate chips (if using) and vanilla extract, then mix again.
Put your mug in the microwave and cook for 3 minutes at 1000 watts.
The cake will rise over the top of the mug, but don’t be alarmed!
(BUT DO PUT A PLATE UNDER THE MUG OR YOU MIGHT
HAVE SOME CLEANUP TO DO – Dr. Nan)
Allow to cool a little, then tip out onto a plate if desired.
EAT ! (This can serve 2 people if you want to feel slightly more virtuous.)

EUONYMOUS Backstory:

I have to share this.  It came in an email yesterday from Nan Schaller Bankes, recently retired professor of Computer Science at RIT.  This is one of those recipes that is simple, quick, and makes a nice amount of something good.  Especially true if you don’t like to live with a full sized cake  for a week!

Didn’t have straight cocoa, so I pulled out my can of Peppermint Drinking Chocolate (www.maudborup.com although they don’t sell the Drinking Chocolate online).

I read the ingredients and saw that there was a lot of sugar in the peppermint chocolate mix, so I modified the recipe slightly to use 3 tbsp of sugar and 3 tbsp of the chocolate mix (which has little bitty choc chips in it by the way).  Mixed it up in a 2 cup Pyrex measuring cup.  Put that on a plate (belt and suspenders approach).  Zapped it for 3 minutes.

Results:  ultimate size was 1.5 cups, but it clearly went higher and then settled a bit.  Don’t think I could eat all that alone, so hubby and I shared it.

Very good.  Especially nice with coffee.

The tiny choc chips seemed to all settle on the bottom, so when I dumped it out on the plate, they were on the top, and that looked nice.  Gerry liked it, too, and he thanks Dr. Nan profusely.

My guess is this is a very nice little formula with which one can tinker quite a bit.  I’ll let you know when I try a tiny carrot cake.

Chocolate Cake Reprise

Here’s another variation: use applesauce 1 for 1 instead of oil.  It works fine.  so my latest recipe uses 1/2 the sugar (2 Tbsp.  instead of 4Tbsp.) and 3Tbsp. applesauce instead of oil.  It’s a just a tiny bit less chocolatey ….  Nan

  1. Me again. Tried the carrot cake experiment. Now I see why perfecting a new recipe might be a time consuming project. You do NOT want to try that version. Back again hopefully with something edible.
